Green tea is not allowed to oxidize after being picked. In Japan they steam the leaves to stop oxidation and in China they pan fire them. Chinese green tea tends to be more nutty and light, while Japanese green tea is smoother with a greener taste.
Green Tea carries the highest amount of antioxidants, rich in Vitamin C and low in caffeine.
