OOLONG TEA
Oolong tea (Wu-long tea) is allowed to oxidize and absorb oxygen after being picked. The leaves are set outside under the sun to wilt. This causes a chemical reaction which produces these wonderful aromas and tastes. Oolongs can be very green or dark. Some are roasted to all degrees and some aren't roasted at all. Good Taiwanese oolongs are some of the best teas in the world.
